Short Description: Culinary Weekends
Long Description: Come and explore Vermont and the small town charm of Brandon. Brandon is home to many artists including the famed folk artist, Warren Kimble, and over the past few years has seen an influx of new galleries as well as the renovated Brandon Artists Guild.
The new centerpiece of dining in Brandon is the Café Provence, owned and operated by Chef Robert Barral. Barral attended culinary school in Montpellier and hotel school at Lediguière in Grenoble before going to work at the hotel Alban Ambassador in Basel, the four-star Château de Divonne in Divonne-les-Bains, France, and the Terminus Saint-Lazare in Paris. But North America beckoned, and Barral crossed the Atlantic to hang his hat at the Four Seasons Hotel group, working in Montreal, Edmonton, Chicago, and Boston. In 1987, Chef Barral joined the faculty at the New England Culinary Institute and, except for a two-year hiatus cruising around the world as executive chef for Celebrity Cruise Line, he has been there ever since.
Owner/chef Louis Pattis has won the most consecutive awards in the history of A Taste Of Vermont, the most prestigious statewide culinary competition with 25 pre-qualified participants. In past years Chef Pattis and the Brandon Inn were the overall Grand Prize winners and received Gold Medals in Entree, Dessert, Salad and Appetizer categories. Silver Medals were awarded to him in Bread & Starch and Vegetables categories. The Brandon Inn won a Silver and a Gold Medal for Salon Culinaire for Chef Pattis' butter sculpture of Morgan Horses and his marzipan "Jungle Parade." Chef Pattis has worked for many top hotels throughout Europe and the United States including the Four Seasons.
Take a weekend to discover the culinary and visionary arts that this wonderful town of Brandon has to offer. Enjoy two nights at the Brandon Inn, Established in 1786 and listed on the National Historic Register. The Brandon Inn is a traditional style country inn in a quintessential small Vermont town setting. The inn offers 40 individually decorated air conditioned rooms with phones; comfortable spacious sitting rooms with antiques; large enclosed porch; and great inn style meals. “Going to the Brandon Inn is the Attraction”
Upon your arrival you will be treated to dinner at the inn by Austrian trained chef, Louis Pattis. This will be an unforgettable dining experience in the inn’s Main Dining Room.
Start your Saturday with a hearty Vermont country breakfast at the inn. Following breakfast, enjoy a short walk to the Café Provence where you will enjoy a two hour cooking class with Chef Barral, featuring French Cusine. You will have some free time for browsing and lunch on your own in this charming town. This afternoon we return to the Brandon Inn for an afternoon cooking class with Chef Pattis, featuring the foods of Austria. This evening enjoy a gallery walk through a few of Brandon’s Art Galleries. This evening, take time to meet the artists while you enjoy Wine & Hors d’ oeuvres. Conclude your day with a Wine Tasting Dinner at the Café Provence.
After breakfast, depart for home taking with you many fond memories of your time in Vermont.
Testimonials: I returned this month from my first culinary experience, a program in Vermont emphasizing the state's specialty foods. This was the program's debut, and it will be offered again next year. I recommend it. DH |
